Choose a baking day and work backward. Feed your starter the night before, mix the dough in the morning, and let time do most of the work.
The goal is consistency, not perfection. Your kitchen temperature and flour will shape the timing, so watch the dough more than the clock.
Use simple ingredients well
Flour, water, salt, and starter are enough for a beautiful loaf. We favor organic flour and fresh milled grains whenever they fit the recipe.
